Zucchini Pizza

1 medium zucchini, sliced
Spaghetti sauce of your choice
Toppings of your choice
Olive Oil

This recipe is pretty simple to throw together =)

Brush zucchini slices with olive oil and cook under broiler for 3-5 minutes.
Brush with olive oil, top with sauce and toppings of your choice. Broil in oven until cheese is melted.
Super yummy!

Homemade Beef Broth
Homemade Chicken Broth

1 tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon dried oregano
1/2 teaspoon paprika
1 1/2 teaspoons ground cumin
1 teaspoon sea salt
1 teaspoon black pepper

In a small bowl, mix together chili powder, garlic powder, onion powder, red pepper flakes, oregano, paprika, cumin, salt and pepper. Store in an airtight container.

Homemade Chicken Broth












Chicken Carcass
Celery
Onion Peels, Onion Ends
Carrot Peels, Carrot Ends
Bell Pepper Ends

When I often make a whole chicken in the crockpot I save the carcass. I will take whats left of the chicken out of the crockpot and put it away. I then place all of the veggies listed in the crockpot. So basically anything you would generally throw away SAVE =) I keep a zip lock bag in our fridge with onion ends, carrot peels and so on. The only thing I do not save is potato peels. You don't want those because they will give your broth a dirt flavor.

Throw everything in the crockpot and fill it up with water until it's about 2/3's full. Scrape the bottom of the crockpot with a spoon to make sure you loosen up all of the chicken drippings. Sprinkle salt, pepper and Italian Seasoning in. Place the lid on and set on Low overnight for 8-10 hours.

In the morning drain through a sieve, place broth in container and freeze. Ta-Dah!!! Homemade chicken broth =)

Broths in the store 1) are too expensive and 2) contain lots of added additives.

Homemade Beef Broth













Beef Roast Drippings (stay with me on this one =)
Celery

Slow Cooked BBQ Pulled Chicken













6 boneless skinless chicken breast
1 small bottle Bulls-Eye BBQ Sauce (this is the ONLY bbq sauce I have found that is Gluten AND Casein free. Most bbq sauces contain Caramel Coloring which milk and sometimes gluten is used in this.)
1 TBL worcestershire sauce
1/4 cup brown sugar

Cook chicken on high in crockpot for 1 hour. Drain juices. Add all other ingredients and cook on low for 3 hours.

Ashlies Notes: Supper yummy! Can be served over white rice, on gluten free bread, on top of a salad or in a corn tortilla!
