Strawberry-Hearts Shortcake

 
1 can country biscuits (NON-flaky kind)
Cleaned Fresh Strawberries

Sauce
1 lb. frozen whole strawberries
1/2 cup water
1 TBL. lemon juice
6 TBL. sugar (white)
Cool whip (set aside for topping) 

Make the sauce first. Put the strawberries, water, lemon juice, and sugar in a sauce pan on high heat, and simmer for 10 minutes, until the sugar is dissolved and the strawberries are soft. Chill the sauce in the fridge.

To Make Heart Strawberries: Ok, you're going to have to experiment here and i will do my best to explain since I didn't take a picture. Sorry! =) PULL off the green stem of the strawberry-DO NOT cut off =) Slice the strawberry down the center length wise (use the photo). Take a perry knife and cut the bottom sides to form the point of the heart. Use the perry knife to gently cut the top of the strawberry into a heart. Only make as many hearts as you have biscuits! =)
Take your store bought biscuits and place them on a baking sheet. Place one heart on each top and very gently press the strawberry SLIGHTLY down into the biscuit.

1/2 way through the baking process open your oven and re-push down your hearts into your biscuits. Let the biscuits finish baking. Bake according to package instructions.

Top with the chilled strawberry sauce and cool whip!

Blueberry Bran Muffins
















1 1/2 cups wheat bran flour (you can find this at your local whole foods)
1 cup fat free milk
1/2 cup unsweetened applesauce
1 egg
1/2 cup brown sugar (you can up this to 2/3 if you prefer sweeter)
1/2 tsp. vanilla extract
1/2 all purpose flour
1/2 cup whole wheat flour
1 1/4 tsp. baking powder
1/2 tsp. salt
1 cup fresh blueberries

Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or use paper muffin liners. Mix together wheat bran and milk, and let stand for 10 minutes.

In a large bowl, mix together applesauce, egg, brown sugar, and vanilla. Beat in bran mixture. Sift together all-purpose flour, whole wheat flour, baking powder and salt. Stir into bran mixture until just blended. Fold in blueberries. Scoop into muffin cups.

Bake in preheated oven for 15 to 20 minutes, or until tops spring back when lightly tapped.

Baked What-Ever-You-Want-In-A-Cheese-Omelet -Roll



6 eggs
1 cup milk (I used fat free)
1/4 cup flour
1 1/4 cup cheddar, shredded
1/3 cup sweet onion, chopped
6 pre-cooked breakfast sausage links, chopped up
8 Thin deli ham slices (that's how many it took for me to cover the top)

GREASE very good a 9x13 baking dish. This is key to being able to roll the omelet.

Pre heat oven to 450.

Beat eggs and milk until well blended, add salt and pepper to taste. Mix in flour and mix in well (there will be some tiny clumps so don't worry but try to get as many out as you can)

Pour into baking dish and bake for 10 minutes BUT start watching it once it's been in there for 5 minutes because oven temperature may vary, you want it to look puffed up and fluffy, then take it out. For me, that took 10 minutes.

Take out and sprinkle your ingredients of choice. I layered the onions, sausage and ham. then sprinkle 1 cup of cheese on top and place back in the oven for 5 minutes or until cheese is good and melted.

Take out and using a large spatula (I actually used 2 spatulas, one in each hand =) and starting at the short side begin to roll the omelet until the end. Sprinkle top with the 1/4 cup of cheese, place in the oven until melted. Remove to a serving dish and cut into slices =)

This is actually really good. At first I wasn't sure if I would like it because of the flour in the eggs but I did!! It was really good and keep in mind that one small slice of this is VERY filling. 3 of us ate this and we had half of the roll left over because it was so filling. Also as a side note I personally thought the re heated left overs tasted better than it did the first time around!!

Ham and Sausage Crustless Quiche


So bare with me as I give the ingredients to you as I don't recall the brands =/ And often times when I cook I don't really use measurements =) This is a VERY TASTY quiche I honestly make this quiche once a week =) My little toddler and husband (and myself of course) love it so much =)

4 eggs
1 green onion, chopped
1/3 cup chopped sweet onion (we like onions and the flavor they give eggs)
1 1/4 cup milk (we use fat free or low fat)
5 pre-cooked breakfast sausage links, sliced up
3 small pre-cooked ham steaks, chopped
1 1/2 cup mild or sharp cheddar, shredded (we also use low fat)
pepper to taste (I do not use salt because the sausage and ham have plenty)
1 TBL. flour

Pre heat oven to 325.

Grease a pie dish.

Mix all ingredients together good. Pour into dish and back for 1 hour at 325.

Homemade Cinnamon Rolls (Bread Machine)


Bread Machine version and FOOL PROOF =)

ROLLS
3/4 cup water and 2 TBL.
2 TBL. butter, softened
2 1/2 cups bread flour
1/4 cup granulated sugar
1 tsp. salt
1 tsp. bread machine yeast

Filling
1/3 cup brown sugar
2 tsp. ground cinnamon
2 TBL. butter, softened

Glaze
3 ounces cream cheese
1/4 cup butter
1 1/2 cup confectioners sugar
1/2 tsp. vanilla extract
1/8 tsp. salt


Put wet ingredients in first, then dry ingredients EXCEPT YEAST.

Form a well with your finger in the flour and pour your yeast into it.

Set your bread machine for the dough cycle.

When done take dough out and place on a lightly floured surface, roll out into a 9 inch square.

Mix your brown sugar and cinnamon. Rub the butter onto the dough surface then sprinkle with the sugar mixture.

Roll up tightly into a log and pinch the edges to form a closed seal (not the ends though)

Cut into 1 inch slices (making 9 rolls) and place in a greased 9x13 dish. Loosely cover with plastic wrap and let rise for 1 hour. I placed mine outside for best results =)

**You can also place these in the fridge overnight (after they rise) but you will need to let them rise again in the morning for about 30 minutes**

Bake at 375 for 16-17 minutes.

Frost or drizzle with glaze =)

This was my first time ever making cinnamon rolls from scratch and my what a great success!! It's fool proof I PROMISE!!

Banana Crumb Muffins

Don't judge the muffins by their photo!! These are seriously the BEST banana muffins I have ever had and the topping is so yummy!!!

Muffin:
1 1/2 cups flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
4 medium sized bananas, mashed
3/4 cup sugar
1 egg
1/ cup butter, melted
dash of ginger
1/8 tsp. vanilla extract
1 tsp. lemon juice

Topping:
1/3 cup brown sugar
1 TBL. flour
1/8 tsp. cinnamon (or more to your liking-I add a tiny bit more =)
1/4 cup chopped nuts
1 TBL. cold butter

Preheat oven to 375. Get a 12 muffin pan and spray with non stick spray. Set aside.

In a large bowl mix the first 4 muffin ingredients together.

In a separate bowl mix bananas, sugar, egg, vanilla extract, ginger, lemon juice and melted butter together.

Add dry mixture to banana mixture and mix well.

Fill your muffin cups with mixture and set aside (DO NOT place in oven yet)

In a mixing bowl mix first 4 topping ingredients together and then cut in butter until crumbly.

Sprinkle on top of each muffin cup then bake in oven for about 18 minutes.

Basic Omelette













1 tsp. low fat butter
2 eggs
1 TBL water or milk
shredded cheese (how much you like)
ham, chopped (how much you like)
mushrooms, chopped (how much you like)
chopped spinach (optional)
diced tomatoes (optional)
1/4 tsp. chives, chopped
salt
pepper

Heat a non-stick skillet until butter sizzles.

Whisk eggs; add to skillet.

Sprinkle eggs evenly with cheese, ham, chives, salt and pepper and other veggies of your choice.

Cover and cook over low heat until eggs solidify, about 5 minutes.

Slide from skillet to plate, folding omelette in half with edge of skillet.

Breakfast Torta (Mexican Sandwich)





























So this is called a breakfast torta but you can eat it for any meal! It may not look yummy, but I PROMISE you it is SUPER YUMMY!!!

4 eggs
1/3 cup plain mild salsa
1/4 cup shredded mozzarella
salt and pepper to taste
1 can of black beans, drained.
1 avocado
2 ciabatta buns (you can get them at walmart)


Spray a skillet with non-stick spray.

Pour the salsa in and heat up for a minute.

In a bowl, whisk the eggs, then pour into the skillet.

Mix in the eggs with the salsa. When eggs are almost done add salt and pepper and shredded mozzarella.

In a separate skillet pour BLACK beans and smash with potato smasher. (Add a couple TBL. spoons of water to loosen it up and add salt and pepper to taste)

Heat up oven to 350 (you can throw the bread in while the oven is preheating). Place Ciobatta bread in oven for 2 minutes to gt a little toasty and warm.

Spread a thin layer of beans on the bread, then layer with egg mixture, then avocado... tah-dah!!!

DIETERS: Just skip the bread and the avocado
