Crockpot Chicken Enchilada Chili


This is my new favorite soup. I have had this recipe for 3 weeks now and I have already made it 3 times, that's how good this is!!!

3 large chicken breasts, frozen
1 1/2 cups prepared mild enchilada sauce
2 cans diced Italian tomatoes
1 small-medium size yellow onion chopped
1 can pinto beans, cleaned and drained
1 can black beans, cleaned and drained
1-2 tsp. ground red pepper (2 gives it a nice kick if you like it hot)
2 heaping TBL. minced garlic (sometimes I even do 3, up to you =)
1 tsp. cumin
1/2 cup water
1/2 can sweet corn
pepper and salt to taste (this chili WILL need salt but how much is up to you, I start with 1 tsp and then go from there)

Sour cream and cheese to top the finished product ;)

Spray the inside of your crockpot with non stick spray.

Add chicken, cook on high for 2 1/2 hours. DRAIN all liquid from chicken, shred chicken. Throw in ALL other ingredients and cook on low for 1 1/2-2 hours.

Paneras Broccoli and Cheese Soup


Not sure if many of you are familiar with Panera but its a gourmet sandwich place in Colorado and this is one of their beeeesssstttt soups =) You must try this recipe it is now one of our favorites!

  • 1 tablespoon melted butter
  • 1/2 medium chopped onion
  • 1/4 cup melted butter
  • 1/4 cup flour
  • 2 cups half and half cream
  • 2 cups chicken stock
  • 1/2 lb fresh broccoli
  • 1 cup carrots
  • 1/4 teaspoon nutmeg
  • 8 ounces grated sharp cheddar
  • salt and pepper
Saute onion in butter. Set aside.

Cook melted butter and flour using a whisk over medium heat for 3-5 minutes. Stir constantly and add the half & half.

Add the chicken stock. Simmer for 20 minutes.

Add the broccoli, carrots and onions. Cook over low heat 20-25 minutes.

Add salt and pepper. Can be pureed in a blender but I don't. Return to heat and add cheese. Stir in nutmeg.

Servings: Makes about 5 cups.

Tomato-Basil Tortellini Soup

David and I love Souper Salad (for those in Florida, it's like Sweet Tomatoes) They had this soup one night that we went Tomato Basil and I fell in love with such a simple soup. Very different from plain tomato soup. So I looked for recipes for one and I found one that had Tortellini in it and WOW what a great yummy soup! We loved it! Here ya go!

1 TBL spoon olive oil
2 Garlic Cloves, minced (or 2 tsp. minced garlic)
2 (14 1/2 ounce) cans Chicken Broth
2 (14 1/2 ounce) cans diced tomatoes
1 (9 ounce) package cheese tortellini (or beef tortellini, whichever you prefer)
1 cup fresh basil, chopped
Salt and Pepper to taste

Over medium heat cook garlic in oil until you can smell it cooking =)

Stir in broth and tomatoes; bring to a boil.

Add tortellini, reduce heat and simmer for 10 minutes.

Stir in basil, salt and pepper.

Simmer for 3 minutes longer.
