Zucchini Pizza

1 medium zucchini, sliced
Spaghetti sauce of your choice
Toppings of your choice
Olive Oil

This recipe is pretty simple to throw together =)

Brush zucchini slices with olive oil and cook under broiler for 3-5 minutes.
Brush with olive oil, top with sauce and toppings of your choice. Broil in oven until cheese is melted.
Super yummy!

Southwestern Salad


Iceburg Lettuce
1 can black beans, rinsed (you can sub these out for ranch style beans too. just make sure you drain them first-no rinsing necessary)
1-2 roma tomatoes, chopped
reduced fat shredded cheddar cheese
chili cheese fritos, crushed
ranch dressing

This recipe is pretty self explanatory =) A little bit of all of the ingredients and you have yourself a SUPER tasty salad. This recipe has been in my family for a long time with a few alterations. My mom used ranch style beans growing up (you can find these at your grocery store next to the canned beans) but I personally have a special liking for black beans =) I just remember loving this salad growing up and now I make it for my family and they love it. My husband can sit and eat a ginormous bowl filled of this stuff! The Chili Cheese Fritos really make this whole salad! =)

I know it might sound a little bit odd but this is one heck of a tasty salad. I also highly suggest sticking to ranch dressing as opposed to another. Ranch really makes this come together =)

South Beach Approved Jambalaya!


4 boneless skinless chicken breast (cut in 1/2 length wise)
41-60 medium pre-cooked shrimp, thawed and cleaned
Sausage of your choice (if you use ground only use 1/3 lb.)
1 tsp. Italian seasoning
1 tsp. parsley flakes
1/2 tsp. salt
1/4 tsp. pepper
1 tsp. cayenne pepper
1 cup homemade chicken broth
1/2 cup diced onion
3/4 of a bell pepper, chopped
2 cans all natural, diced tomatoes (read labels! =)

In a crockpot cook chicken breast on high for 3 hours. Drain juice and place chicken back in crockpot. Place all remaining ingredients in except the shrimp. If you use ground sausage, cook it first before placing it in the crockpot. Turn crockpot down to low for 2 hours.

30 minutes before food is done place shrimp in crockpot.

Ashlies Notes: This is SO GOOD! We make this pretty often and I have used Kielbasa sausage, andouille and ground jimmy dean sausage and all have tasted really good. Be careful on your pork intake. One thing to know is that pigs do not have sweat glands so all of the toxins in their body have no where to go but their meat =)

Egg, Ham and Cheese Pies


12 slices of deli ham
12 eggs
2 TBL. fat free/light grated Parmesan cheese
1 tsp salsa (optional)
diced tomatoes (optional)
chopped green onion (optional)

Pre heat oven to 350.

Spray a 12 cup muffin pan well with non stick cooking spray.

Place a slice of ham in each muffin cup.

Break an egg into each muffin cup (inside the ham cup)

Sprinkle lightly with salt and pepper, grated parmesan cheese and place in oven for 15 minutes.

Ashlies Notes: I used reduced fat fiesta blend cheese. I only made 3 cups and I topped with a tsp. of salsa. If you don't want an over easy egg just scramble the egg before placing it in the ham cup. You can also just use egg whites if you wish. Limit to 3 per meal.

Ham and Sausage Crustless Quiche


So bare with me as I give the ingredients to you as I don't recall the brands =/ And often times when I cook I don't really use measurements =) This is a VERY TASTY quiche I honestly make this quiche once a week =) My little toddler and husband (and myself of course) love it so much =)

4 eggs
1 green onion, chopped
1/3 cup chopped sweet onion (we like onions and the flavor they give eggs)
1 1/4 cup milk (we use fat free or low fat)
5 pre-cooked breakfast sausage links, sliced up
3 small pre-cooked ham steaks, chopped
1 1/2 cup mild or sharp cheddar, shredded (we also use low fat)
pepper to taste (I do not use salt because the sausage and ham have plenty)
1 TBL. flour

Pre heat oven to 325.

Grease a pie dish.

Mix all ingredients together good. Pour into dish and back for 1 hour at 325.

Chicken Capri


5 TBL. low fat ricotta cheese
1/2 tsp. dried oregano
1 tsp. dried parsley flakes
1/4 tsp. salt
1/4 tsp. pepper
2 1/2 TBL. grated parmesan cheese
garlic powder
2 TBL. EVOO
2 large tomatoes, chopped (lightly toss with salt)
4 slices mozzarella cheese
4 boneless skinless chicken breast

Pre heat oven to 350.

In a small bowl mix together first 6 ingredients, set aside.

In a skillet brown your chicken breasts 5 minutes per side and lightly sprinkle with, salt, pepper and garlic powder (each side)

When done place in a shallow, lightly greased casserole dish. Put a layer of ricotta mixture on each chicken, cover chicken in tomatoes then a slice of mozzarella on each chicken.

Bake uncovered for 30 minutes.
Yummy and healthy!

Spicy Garlic Shrimp


1 lb. pre cooked shrimp, cleaned, tails off
2 TBL EVOO
2 garlic cloves crushed with the side of the knife
1/4 tsp. red pepper flakes
1 tsp. steak seasoning
1 tsp. lemon zest
2 tsp. lemon juice
1 TBL fresh parsley, minced

Heat a large skillet over medium high heat.

Add olive oil, garlic, red pepper flakes, and shrimp.

Season with grill seasoning or salt & pepper.

Cook shrimp 3-4 minutes.

Toss with lemon zest, juice, & chopped parsley.

Remove shrimp to a serving platter, leaving the garlic cloves in the pan.
Ashlie's Notes: If you do not want this spicy then just omit the pepper flakes. This dish is SUPER YUMMY!
