Chocolate Chip Corn Flake Cookies


1/2 cup butter or margarine, softened
1 cup brown sugar
1 large egg
1 tsp. vanilla extract
1 1/4 cup flour (I used bread flour)
1/4 tsp. salt (optional)
1/2 tsp. baking soda
1/2 tsp. baking powder
3/4 cup corn flakes
1 cup semi-sweet chocolate chips

These are really some of my very favorite cookies. They are slightly soft/chewy with a crunch! IF you do not overcook them ;)

Pre heat oven to 350

Cream together the sugar and butter. Add vanilla and egg. In a separate bowl sift together the flour, baking soda, salt and baking powder. Mix in corn flakes and chocolate chips.

Add the creamed mixture to the flour. Drop by Tablespoons.

Bake at 350 for 9 minutes. Be careful with these, if you over cook them they will taste crispy =)

For a Low Fat version:
Switch out the white flour for wheat flour
2 egg whites per 1 whole egg.
Equal amount of un sweetened applesauce for butter
