
1 TBL spoon olive oil
2 Garlic Cloves, minced (or 2 tsp. minced garlic)
2 (14 1/2 ounce) cans Chicken Broth
2 (14 1/2 ounce) cans diced tomatoes
1 (9 ounce) package cheese tortellini (or beef tortellini, whichever you prefer)
1 cup fresh basil, chopped
Salt and Pepper to taste
Over medium heat cook garlic in oil until you can smell it cooking =)
Stir in broth and tomatoes; bring to a boil.
Add tortellini, reduce heat and simmer for 10 minutes.
Stir in basil, salt and pepper.
Simmer for 3 minutes longer.
It looks and sounds so good! I'll have to take your word for it though. I'm allergic to tomatoes. :<<
ReplyDeleteThat's terrible! I'm a huge fan of the tomato, only since my pregnancy though. before that I hated them, strange how that is =)
