Mini Fruit Pizzas


1 roll store bought sugar cookie dough
Cream Cheese Frosting
Fruit of your choice

Bake cookies according to package instructions.

Let cool.

Frost. Then place desired fruit on top and chill in fridge. Cover with plastic wrap.
 
Ashlie's Notes: These are a big hit and VERY yummy not to mention SUPER DUPER easy and QUICK!

Oreo Stuffed Cookies

  • 1 cup (2 sticks) softened butter
  • 3/4 cup packed light brown sugar
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 3 1/2 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 cups semi-sweet chocolate chips
  • 1 package Double Stuff Oreo cookies
  1. Preheat oven to 350 degrees.
  2. Cream butter and sugars together with a mixer until well combined.  Beat in eggs and vanilla.
  3. In a separate bowl mix the flour, salt and baking soda.  Slowly add to wet ingredients along with chocolate chips until just combined.
  4. Using a cookie scoop take one scoop of cookie dough and place on top of an Oreo Cookie.  Take another scoop of dough and place on bottom of Oreo cookie.  Seal edges together by pressing and cupping in hand until Oreo cookie is enclosed with dough.  This works best if you frequently wet your palms between making each cookie. It's the only way I found the dough doesn't stick to my hands. Place onto a parchment or silpat lined baking sheet and bake cookies 9-13 minutes or until golden brown. Let cool for 5 minutes before transferring to cooling rack.
Ashlie's Notes: You might be thinking at this point "Hmm, I have the perfect chocolate chip cookie recipe for this!!!" No, you don't lol. This has been the only cookie recipe I have found that will bake UP and AROUND the oreo. Other recipes the cookie will go flat and it looks like you have a big ugly bump in the middle of your cookie! These are heavenly so get off the computer, run to your kitchen and go make these right now! =) And just so you know, these are in no way healthy. I think I had an extra jiggle in my step the next day =)

Ooey Gooey Cookie Bars


Crust

1/2 cup granulated sugar
3/4 cup flour
1/3 cup unsweetened baking cocoa
1/4 tsp. salt
1/4 cup melted butter

Filling


2 cups milk chocolate chips (1 bag)
3 cups mini marshmallows
1 1/2 cup shredded coconut
1 cup chopped pecans
1 can sweetened condensed milk (14 oz can)

Assemble:

These are SO DARN YUMMY!!!! They look and sound simple but they taste so good!

Mix all of the crust ingredients together EXCEPT the butter.

Last, mix in melted butter with fork. When the butter is incorporated the mixture should resemble small beads.

Place crust mixture into a GREASED 9x13 baking dish. Pat the crust down evenly with your hand or spatula.

Sprinkle the chocolate chips evenly over the crust.

Next, sprinkle the marshmallows over the chocolate chips.

Next, sprinkle coconut over marshmallows, then the chopped nuts.

Press layers down with your hands or spatula.

Last pour the sweetened condensed milk EVENLY over the top.

Bake at 350 for 20 minutes. Remove and let cool.

After they cool cut these into bars BEFORE you refrigerate. They will set and harden once the cool making them hard to cut.

Place in freezer for 25-30 minutes OR refrigerate for 1 hour and 30 minutes

Black and White Cookies


1 cup packed brown sugar
1 cup butter or margarine; softened

1 tsp vanilla
2 eggs
2 cups flour
1/3 cup unsweetened baking cocoa
3/4 tsp baking soda
1/2 tsp. baking powder
1/4 tsp salt
1 bag (12 oz) white chocolate chips (2 cups)

Heat oven to 330.

In large bowl beat together brown sugar, butter, vanilla and eggs.


In a separate bowl sift together flour, cocoa, baking powder, baking soda, salt and chips.

Add two mixtures together. I dropped these by 1 heaping TBL

Bake 12 minutes.

These are so yummy. They taste like a mini brownie I think.

Chocolate Chip Corn Flake Cookies


1/2 cup butter or margarine, softened
1 cup brown sugar
1 large egg
1 tsp. vanilla extract
1 1/4 cup flour (I used bread flour)
1/4 tsp. salt (optional)
1/2 tsp. baking soda
1/2 tsp. baking powder
3/4 cup corn flakes
1 cup semi-sweet chocolate chips

These are really some of my very favorite cookies. They are slightly soft/chewy with a crunch! IF you do not overcook them ;)

Pre heat oven to 350

Cream together the sugar and butter. Add vanilla and egg. In a separate bowl sift together the flour, baking soda, salt and baking powder. Mix in corn flakes and chocolate chips.

Add the creamed mixture to the flour. Drop by Tablespoons.

Bake at 350 for 9 minutes. Be careful with these, if you over cook them they will taste crispy =)

For a Low Fat version:
Switch out the white flour for wheat flour
2 egg whites per 1 whole egg.
Equal amount of un sweetened applesauce for butter

Graham Cracker Drop Cookies


1 14oz. can SWEETENED CONDENSED milk (not evaporated)
3 cups crushed honey graham crackers (equals one box crushed)

1 cup milk chocolate chips

1 cup coconut


Pre heat oven to 350.

Mix all ingredients and form into 1-inch balls. (I just put all the crackers in a gallon bag, suck the air out and then step on them ;) I guess a rolling pin would be just as effective but stepping on them is more fun if you have little ones ;)

Roll in coconut and place an inch apart on a lightly greased cookie sheet.

Bake for 8-10 minutes.

Ashlie's Notes: Seems so simple right? This is our new FAVORITE cookie and these are a huge hit with others ;)

Hershey's Kiss Peanut Butter Cookies


1/2 cup shortening (I substituted with butter)
3/4 cup peanut butter
1/3 cup sugar
1/3 cup brown sugar
1 egg
2 tablespoons milk
1 teaspoon vanilla
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
additional sugar
48 Hershey's chocolate kisses

Preheat oven to 375.

In mixer, beat shortening (or butter depending on your choice) and peanut butter until well blended; Blend in sugars and beat until light and fluffy.

Add egg, milk and vanilla; Beat well.

Stir together flour, baking soda and salt; gradually mix in peanut butter mixture.

Shape dough into 1-inch balls (I shaped into hearts) and roll in additional sugar.

Place on un greased cookie sheet and bake 8-10 minutes or until lightly browned.

Immediately place a Hershey's Kiss on each cookie and press down slightly.

LOVE these and they were a big hit! ;)

Pineapple Bars


Bars:
2 cups flour
1 cup sugar
1 tsp. baking soda
1 tsp. baking powder
1 20 oz. can crushed pineapple in heavy syrup; DO NOT drain
1tsp. vanilla
2 eggs beaten

Frosting:
8 oz. cream cheese, softened
1/4 cup butter
1 3/4 cup powdered sugar
1 tsp. vanilla
1/2 cup nuts, crushed (Optional)

Preheat oven to 350. In a large bowl stir flour, sugar, baking soda and baking powder. Add pineapple with syrup, vanilla and eggs. Pour into a greased 11x17-inch cookie sheet and bake at 350 for 25 minutes.

While bars are baking, prepare frosting by mixing all frosting ingredients. Spread over HOT cake.

Cut into bars once cool (about 30 minutes)

VERY YUMMY!!!

Homemade Nutter Butters





























3/4 cup all-purpose flour
1/2 tsp baking soda
1/4 tsp baking powder
1/2 tsp salt
1/2 cup butter, softened
1/2 cup peanut butter
1/2 cup white sugar
1/2 cup packed light brown sugar
1 egg
1 tsp vanilla extract
1 cup oats

filling:
3 TBL butter, softened
1 cup powdered sugar
1/2 cup smooth peanut butter
3 TBL milk

In a mixing bowl, cream together 1/2 cup butter, 1/2 cup peanut butter, white sugar, brown sugar, and vanilla. Add egg and beat well.

In another small bowl, combine flour, baking soda, baking powder, oatmeal and salt. Add these ingredients to the creamed mixture. Stir.

Drop by teaspoons onto baking sheet, and press each ball down with a fork in a criss cross pattern. Bake at 350 degrees for 12 minutes, or until cookies are lightly browned around the edges, you want them a little crispy.

To make the filling: Cream 3 TBL butter with powdered sugar, 1/2 cup smooth peanut butter, and milk. Spread filling onto half of the cooled cookies, then top with the other half to form sandwiches.

Notes: These are absolutely yummy!!! They taste so similar, definitely "man cookies" lol

Cowboy Cookies














1 cup brown sugar
1/2 cup white sugar
1 cup shortening
2 eggs
1 tsp. vanilla
1 1/2 cup flour
1 tsp. baking soda
1/2 tsp salt
2 cups oatmeal
1 1/2 cup coconut
1 1/4 cup chocolate chips
1/2 cup nuts (optional)

Preheat oven to 325

Cream the sugars and shortening together in one bowl. Add eggs and vanilla and mix well.

Sift together flour, baking soda, salt, oatmeal, coconut, chocolate chips and nuts in another bowl.

Mix the 2 mixtures together.

Spoon onto cookie sheet and bake for 12 minutes.

Depending on your cookie size it will make 2 1/2 dozen or more.

Banana Chocolate Chip Cookies

3-4 ripe bananas mashed
2/3 cup shortening
1 cup sugar
2 1/2 cup flour
2 eggs
1/4 tsp. baking soda
2 tsp. baking powder
1 cup chocolate chips
1/2 tsp. salt
1/2 tsp. vanilla

Combine wet ingredients and dry ingredients separately then add together. Mix well. Spoon cookie dough onto cookie sheet. Bake at 350 10-12 minutes.

Makes 2 dozen

Rolo Candy Cookies






























These are such good cookies and pretty easy to make. I usually can't tell when they're done so I always stick a knife in one just to be sure.

1 cup sugar
1 cup brown sugar
1 cup softened butter
2 eggs
1 tsp. vanilla
3/4 cup cocoa
2 1/2 cups flour
1 tsp. baking soda

rolos
extra sugar

Mix sugars and butter together. Then add eggs and vanilla. Mix dry ingredients together and then add to dough.

Roll cookies around rolo and then roll in extra sugar.

Bake at 350 for 8 minutes

Peanut Butter-Honey Cookies


I got this recipe from Better Homes and Gardens and it was exactly what I was looking for because I didn't have any Brown Sugar on hand! This recipe calls for honey instead and now this is how I always make Peanut Butter cookies!

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/4 cup honey
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1-1/4 cups all-purpose flour
  • Granulated sugar (for dipping)
Directions

1. In a large mixing bowl beat butter and peanut butter with an electric mixer on medium to high speed for 30 seconds. Add the granulated sugar, brown sugar, baking soda, and baking powder. Beat until combined, scraping sides of bowl occasionally. Beat in the egg and vanilla until combined. Beat in as much of the flour as you can with the mixer. Stir in any remaining flour. If necessary, cover and chill dough about 1 hour or until easy to handle.

2. Preheat oven to 375 degrees F. Shape dough into 1-inch balls. Roll balls in additional granulated sugar to coat. Place balls 2 inches apart on an un greased cookie sheet. Using the tines of a fork, flatten balls by making crisscross marks on top. Bake for 9 minutes or until bottoms are light brown. Transfer to a wire rack and let cool. Makes about 2 dozen cookies.

TIP: to make criss cross shape instead of using a fork you can use a potatoe masher (they usually have that criss cross shape) dip it in sugar then lightly smash the cookie =)
