
Ingredients
2 (8 oz) packages cream cheese, softened
1/2 cup sugar
1 egg
1 Tbl. Lemon Juice
1 tsp. Vanilla extract
1 box Vanilla Wafers
1 (20 oz) jar cherry pie filling
1 package foil baking cups
Procedure
Beat first 5 ingredients until light and fluffy.
Line muffin pan (or cookie sheet) with foil baking cups and place 1 Vanilla Wafer at the bottom of each cup.
Fill each cup with 1 heaping TBL of cream cheese mixture.
Bake at 375 for 15 to 20 mnts or until set.
Allow them to cool, then top with 2-3 cherries each of pie filling.
Chill and serve
