Baked What-Ever-You-Want-In-A-Cheese-Omelet -Roll



6 eggs
1 cup milk (I used fat free)
1/4 cup flour
1 1/4 cup cheddar, shredded
1/3 cup sweet onion, chopped
6 pre-cooked breakfast sausage links, chopped up
8 Thin deli ham slices (that's how many it took for me to cover the top)

GREASE very good a 9x13 baking dish. This is key to being able to roll the omelet.

Pre heat oven to 450.

Beat eggs and milk until well blended, add salt and pepper to taste. Mix in flour and mix in well (there will be some tiny clumps so don't worry but try to get as many out as you can)

Pour into baking dish and bake for 10 minutes BUT start watching it once it's been in there for 5 minutes because oven temperature may vary, you want it to look puffed up and fluffy, then take it out. For me, that took 10 minutes.

Take out and sprinkle your ingredients of choice. I layered the onions, sausage and ham. then sprinkle 1 cup of cheese on top and place back in the oven for 5 minutes or until cheese is good and melted.

Take out and using a large spatula (I actually used 2 spatulas, one in each hand =) and starting at the short side begin to roll the omelet until the end. Sprinkle top with the 1/4 cup of cheese, place in the oven until melted. Remove to a serving dish and cut into slices =)

This is actually really good. At first I wasn't sure if I would like it because of the flour in the eggs but I did!! It was really good and keep in mind that one small slice of this is VERY filling. 3 of us ate this and we had half of the roll left over because it was so filling. Also as a side note I personally thought the re heated left overs tasted better than it did the first time around!!
